When comparing unsweetened 100% cocoa masses, start with the application. The flavour that stands out in a bar may play a different role beside cream, butter or milk.

Chocolate bars: make the origin recognisable

For a bar, ask what you want the customer to remember about the cocoa. Is the origin’s identity clear in the finished chocolate? Compare candidates in the formulation you intend to use, rather than choosing from the tasting description alone. The ingredient needs to support the character of your bar.

Ganache and pralines: find the balance

In a filling, cocoa is part of a larger composition. Evaluate its acidity, intensity and balance alongside the cream and butter in your recipe. A cocoa mass that is appealing on its own still needs to work with those ingredients. Judge the finished filling, not only the mass before mixing.

Pastries: check the character beside sugar and dairy

For pastry work, the question is how the cocoa character comes through with the sugar and dairy ingredients already in the product. Test the actual recipe. Do not assume that a description such as fruity or nutty will have the same prominence in every dessert. Decide whether the result fits the product you want to serve.

Drinks: taste after dilution

A cocoa drink introduces another variable: dilution with water or milk. Compare the drink as it will be served. The right choice is the cocoa that produces your intended flavour in that preparation, not necessarily the one with the most striking undiluted tasting profile.

Build a small, useful comparison

Choose an application first, shortlist origins and compare them in the same recipe. Keep notes on what each one contributes. A 100% cocoa mass is an unsweetened ingredient: it still needs a suitable formulation. Tempering alone does not turn it into a balanced sweetened chocolate.

Comagro’s 100% cocoa mass collection is available from 1 kg.
