How to choose cocoa origins for your product range

Your product range does not need a different cocoa origin simply to make the list longer. It needs origins that do different jobs. A useful starting point is a small trial selection: one signature origin, one that offers a clear contrast and one that can bring variety through a rotating product.

A signature origin for the core range

This is the cocoa around which you can build a recognisable product. Choose it for the flavour you want customers to associate with that recipe. It should earn its place through the finished product, not because its name is familiar or because the origin story sounds attractive.

A distinctive origin that creates contrast

The second role is difference. Compare an origin that gives the range another flavour direction rather than a near-duplicate of the first. For example, Colombia Morumbi’s nutty profile and Madagascar Ambohimena’s berry character offer two directions to explore. Whether they create enough contrast in your products is something to test in the recipe.

A rotating origin for a changing product

A rotating origin can support a seasonal recipe or a product you change periodically. Thailand is one example to consider for this role. The point is not to label an origin permanently as seasonal; it is to decide where experimentation belongs in your own range without replacing every core recipe.

Start with a trial, not a permanent number

Trialling three origins can make the comparison manageable: one candidate for each role. This is a working method, not a rule that every business needs three origins. You may find that one cocoa serves several recipes, or that a specialist product deserves its own origin.

Compare the candidates in the products you intend to sell. Ask what changes for the customer when you change the cocoa. Keep the origin whose contribution is clear, and reconsider candidates that do not make a useful difference. This keeps the range deliberate rather than making it a collection of names.

Comagro’s 100% cocoa masses are available from 1 kg per origin. Use that starting quantity to compare recipes before committing to a larger range. Tell us which products you are developing and which flavour roles you want to explore.
